Raw Cacao Mouse

Serves 4

1 cup raw cashews, soaked 6 hours
2 tablespoons rice malt syrup
4 teaspoons coconut oil
1 whole vanilla bean, scraped
½ cups water
2 tablespoons raw cacao powder*

1. Combine all the ingredients in the bowl of a food processor and puree for 3-4 minutes, until the mixture is creamy and fluffy.

2. Place mixture into your favourite glasses or cups and chill 1 hour to further thicken the mousse.

3. Serve garnished with your choice of crushed nuts or berries or coconut flakes lightly toasted.

*I recommend Loving Earth Raw Cacao Powder found in health food stores.
